To prepare masala coin khakhra, you’ll need:

– 1 cup fenugreek leaves (methi), washed and finely chopped
– 2 cups whole wheat flour
– 2 tablespoons gram flour (besan)
– 2 tablespoons oil
– Salt to taste
– Water (as needed for kneading)
– 1 teaspoon red chili powder
– 1/2 teaspoon turmeric powder
– 1 teaspoon cumin seeds (jeera)
– 1/2 teaspoon carom seeds (ajwain) (optional)

1. In a mixing bowl, combine whole wheat flour, gram flour, chopped fenugreek leaves, red chili powder, turmeric powder, cumin seeds, carom seeds (if using), oil, and salt.
2. Gradually add water and knead into a smooth, firm dough.
3. Divide the dough into small balls.
4. Roll out each ball into thin discs.
5. Heat a griddle or tawa over medium heat.
6. Place a rolled-out disc on the griddle and cook until brown spots appear on one side.
7. Flip and cook the other side until golden brown.
8. Press gently with a clean cloth or khakhra press to puff up.
9. Repeat with the remaining dough balls.
10. Allow the khakhras to cool completely before storing them in an airtight container.
