Masala Kela Waffer

Ingredients:

• Raw bananas (green plantains)
• Oil for deep frying
• Salt to taste
• Red chili powder (adjust to taste)
• Turmeric powder
• Chaat masala (optional)
• Lemon juice (optional)

Instructions:

1. Preparation: Peel the raw bananas and slice them very thinly using a mandoline slicer or a knife. Make sure the slices are uniform in thickness so that they fry evenly.
2. Frying: Heat enough oil in a deep pan for deep frying. The oil should be hot but not smoking. Test the oil by dropping a small slice of banana into it; if it sizzles and rises to the surface, the oil is ready.
3. Frying the Slices: Fry the banana slices in batches. Be cautious while adding them to the hot oil to avoid splattering. Fry until the slices turn golden brown and become crisp. This might take a few minutes. Remove the fried slices using a slotted spoon and place them on paper towels to drain excess oil.
4. Seasoning: In a bowl, mix together salt, red chili powder, a pinch of turmeric powder, and chaat masala if using. You can also add a squeeze of lemon juice for a tangy kick.
5. Seasoning the Wafers: While the banana slices are still hot, sprinkle the prepared seasoning mixture over them. Toss and mix well to ensure that the spices coat the wafers evenly.
6. Cooling and Storing: Let the Masala Kela Wafers cool down completely before transferring them to an airtight container. This helps them retain their crispiness.

These wafers are best enjoyed fresh as they tend to lose their crispiness over time due to exposure to air. They are typically served as a crunchy snack alongside tea or coffee. Feel free to adjust the spices and seasonings according to your taste preferences.
